Gluten Free Bran Muffin

Gluten Free Bran MuffinI have been trying to come up with easy things I can grab for breakfast.  Since I have some dietary restrictions it makes grabbing things on the go a real pain in the ass.  Here’s the result of on of my first big experiments.

The reference recipe is from the Red Mill Flaxseed Meal package.  It has been quite significantly modified to suit my needs.

Dry:
½ Cup Rice Flour
1 Cup Flaxseed Meal
½ Cup Corn Meal
½Cup Brown Sugar
2 tsp Baking Soda
1 tsp Baking Powder
½ tsp Salt
2 tsp Cinnamon
1 Cup Crushed Walnuts
½ Cup Raisins

Wet:
¾ Cup Milk
½ Cup Agave Syrup
2 Eggs
1 tsp Vanilla
1 Cup Shredded Carrots
1 Cup Unsweetened Apple Sauce

1. Preheat oven to 350ºF
2. Mix the dry stuff.
3. Mix the wet stuff.
4. Mix the wet stuff into the dry stuff.
5. Dump the batter into muffin pans.
6. Bake until done.  (15-20 minutes)

Yield: 18
